Worried what wine to pair with a smoked brisket? Ben Stieble, an expert in kosher wines at Zachys in Scarsdale, has selected five wines sure to please any palate. Here are his choices and tasting notes:
Carmel Appellation Series Cabernet/Shiraz 2009 Kosher: Cabernet and shiraz are among the most successful varietals grown in Israel and both find a good expression in this wine. It is darker and more brooding than most dry kosher wines, which tend to be rather ripe and jammy. This wine's multi dimensional character fits a more sophisticated palate. Plus, its complexity and dark fruit make for a pleasantly sophisticated pairing with the more rustic or traditional brisket. $15.99.
Bazelet HaGolan Reserve Cabernet Sauvignon 2009 Kosher: The Bazelet is a very special wine, a cabernet that has the fruit forward, high alcohol characteristics of hot climate wines from California, but still has unique characteristics drawn from the Galilee soil. Not only is this wine a great representation of its style but also a fine accounting of the Galilee terroir. There is a dark chocolate, mocha, and cream blend on a heady nose. The palate is decadent with a lot of heavy, creamy notes followed by spice and surprising acidity on the finish. $44.99.
